Warak 3enab bil Zeit


Mama Nawal’s Warak 3enab bil Zeit
(Grape Leaves w/Olive Oil)

Ingredients:
2 cups sweet rice or Egyptian rice
½ cup chopped parsley
1 medium sized chopped onion
½ cup chopped cilantro
½ cup chopped tomato
1 tsp maggi powder
1 tsp mixed spices (all spice)
2 tsp Dried coriander whole seeds
1 tsp cardamom
4 tsp olive oil
1 tsp lemon pepper
2 peeled potatoes and sliced potatoes
5 tsp lemon juice
2 tsp mint powder
1 Jar grape leaves

     Grind Coriander and cardamom
2     Soak the rice in water while you chop the cilantro, parsley, tomato and onion.
3     Mix all ingredients (except potatoes and grape leaves) in a bowl, creating the stuffing


4     Soak grape leaves in water and pull it out one at a time.
5     Line the bottom of the pot with the sliced potatoes.
    Lay the leaf facing up and place 1 tsp of stuffing ¼ of the way down on the leaf. Fold the bottom over the stuffing and begin to roll the leaf. Tuck in the edges as you roll.




     Line the rolled leaves around the pot.



8     Set a plate on top of the leaves and cover with a weight, preferably the empty grape leaves jar filled with water. This prevents the leaves from unrolling while they cook.
9    Fill water to cover the leaves. It should show about a half inch over the cover plate. Add 1 tsp of lemon juice to the broth.
1  Once it boils turn it to medium. Let it cook on medium for 2 hours.
1  When the water dries add one cup of water. You will need to do this twice. Once the water dries the second time the leaves are done.
